  1. Preheat the oven to 325°F (163°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk the egg whites until frothy. Gradually add the granulated sugar and continue whisking until stiff peaks form.
  3. Gently fold in the almond flour, powdered sugar, and coconut flakes.
  4. Divide the mixture into four equal portions and spread each portion into a 6-inch (15 cm) circle on the prepared baking sheets.
  5. Bake for 20-25 minutes or until the dacquoise is golden brown and crisp. Remove from the oven and let cool completely.
  6. In a mixing bowl, whip the heavy cream until soft peaks form. Fold in the orange zest.
  7. In a separate bowl, whisk together the pineapple juice, vanilla extract, cornstarch, orange juice, lime juice, orange liqueur, and salt. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  8. Once the ice cream is churned, transfer it to a lidded container and freeze for at least 2 hours.
  9. To assemble, place a dacquoise layer on a serving plate. Spread a layer of orange pineapple ice cream on top. Repeat with the remaining dacquoise layers and ice cream.
  10. Serve immediately or return to the freezer until ready to serve.
