Pudding cookies are known for their soft and chewy texture, thanks to the addition of instant pudding mix in the dough.

Preheat the oven to 350°F (175°C).

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Add the vanilla extract and instant vanilla pudding mix, and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.

Stir in the chocolate chips.

Drop rounded tablespoons of dough onto a greased or lined baking sheet.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
