  1. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Divide the dough in half. To one half, add the mint extract and green food coloring, mixing until the color is evenly distributed.
  6. On a lightly floured surface, roll out the plain dough into a rectangle about 1/4 inch thick.
  7. Repeat with the mint dough.
  8. Carefully place the mint dough on top of the plain dough, and roll the two together into a tight log.
  9. Wrap the log in plastic wrap and refrigerate for at least 30 minutes.
  10. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  11. Slice the chilled dough log into 1/4 inch thick rounds and place them on the prepared baking sheet.
  12. Bake for 10-12 minutes, or until the edges are golden brown.
  13. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  14. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each interval, until smooth and melted.
  15. Drizzle the melted chocolate over the cooled cookies.
  16. Allow the chocolate to set before serving.
