Preheat the oven to 180°C (350°F). Peel and dice the sweet potato. Cut the zucchini into thin slices. Chop the onion.

Heat olive oil in a non-stick ovenproof skillet over medium heat. Add the sweet potato, zucchini, and onion. Cook for 5 minutes until vegetables are slightly tender.

In a bowl, beat the eggs with milk, salt, and black pepper. Pour the egg mixture over the vegetables in the skillet.

Sprinkle grated Parmesan cheese on top. Transfer the skillet to the preheated oven.
