Peel and dice the sweet potatoes. Boil them until tender, then drain and mash.

In a skillet, melt 2 tablespoons of butter over medium heat. Add the mashed sweet potatoes, brown sugar, cranberries, cinnamon, nutmeg, and vanilla extract. Cook for 5 minutes, stirring occasionally.

Roll out the puff pastry sheet on a floured surface. Spread the sweet potato mixture evenly on top, leaving a border around the edges.

Roll up the pastry tightly, tucking in the ends. Place the strudel on a baking sheet lined with parchment paper.

Brush the strudel with beaten egg and make a few slits on top for steam to escape.

Bake for 30-35 minutes, or until the pastry is golden brown.

Meanwhile, melt the remaining butter in a small saucepan until it turns brown and develops a nutty aroma.
