Peel and grate the sweet potatoes.

In a large bowl, combine the grated sweet potatoes, flour, baking powder, salt, and ground cinnamon.

In a separate bowl, whisk together the egg, milk, and maple syrup.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the sweet potato mixture into the hot oil and flatten with the back of the spoon.

Cook until golden brown on both sides, about 3-4 minutes per side.
