Sweet Potato Cinnamon Buns
Cinnamon buns are believed to have originated in Sweden and are traditionally served on October 4th, known as Cinnamon Bun Day.

Cook the sweet potatoes until tender. Mash and let cool.

In a large bowl, combine flour, yeast, and salt. Mix well.

In a small saucepan, heat milk and butter until butter melts. Let cool.

Add mashed sweet potatoes to the flour mixture. Pour in the milk mixture. Stir until a dough forms.

Knead the dough on a floured surface for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl. Cover and let rise in a warm place for 1 hour.

Punch down the dough and roll it out into a rectangle.

In a small bowl, mix brown sugar and cinnamon. Sprinkle the mixture evenly over the dough.

Roll up the dough tightly from the long side. Cut into 12 equal pieces.

Place the rolls in a greased baking dish. Cover and let rise for 30 minutes.

Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown.

In a small bowl, whisk powdered sugar, vanilla extract, and water to make the glaze.
