Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes and white potatoes into bite-sized cubes.

In a large bowl, toss the potatoes with olive oil, salt, and black pepper until evenly coated.

Spread the potatoes in a single layer on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy.

Meanwhile, prepare the cilantro cream by combining cilantro, sour cream, and lime juice in a blender or food processor. Blend until smooth.

Remove the potatoes from the oven and let them rest for 5 minutes.
