Sweet and Spicy Hash with Baked Eggs

Preheat the oven to 400°F (200°C).

Peel and dice the potatoes into small cubes.

Heat olive oil in a large skillet over medium heat.

Add the diced potatoes and cook until golden brown, about 10 minutes.

Meanwhile, chop the onion, red bell pepper, jalapeno pepper, and garlic.

Add the chopped vegetables to the skillet with the potatoes and cook for another 5 minutes.

Sprinkle ground cumin, paprika, salt, and black pepper over the vegetables and stir well.

Transfer the hash mixture to a baking dish.

Make four wells in the hash mixture and crack an egg into each well.

Bake in the preheated oven for 10-12 minutes, or until the eggs are cooked to your liking.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh cilantro and serve hot.
