Swedish Semlor are traditionally eaten on Shrove Tuesday, also known as Fat Tuesday, as a way to indulge before the fasting period of Lent begins.

  1. In a small saucepan, heat the milk until warm. In a large mixing bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5 minutes or until foamy.
  2. Add the remaining sugar, melted butter, ground cardamom, salt, and half of the flour to the yeast mixture. Stir until well combined.
  3. Gradually add the remaining flour, a little at a time, until the dough comes together and is slightly sticky.
  4. Knead the dough on a lightly floured surface for about 5 minutes or until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven to 400°F (200°C). Punch down the dough and divide it into 8 equal portions. Shape each portion into a round bun and place them on a baking sheet lined with parchment paper.
  7. Cover the buns with a clean kitchen towel and let them rise for another 30 minutes.
  8. Bake the buns in the preheated oven for 10-12 minutes or until golden brown.
  9. While the buns are baking, prepare the almond filling. In a medium bowl, combine the almond flour, powdered sugar, and whipping cream. Stir until smooth.
  10. Remove the buns from the oven and let them cool on a wire rack.
  11. Once the buns have cooled, cut off the top of each bun and set it aside. Scoop out some of the soft bread from the center of each bun and transfer it to a bowl.
  12. Add the almond filling to the bowl with the bread crumbs and mix until well combined.
  13. Spoon the almond filling back into each bun and replace the top.
  14. Whip the whipping cream with vanilla extract until stiff peaks form. Pipe or spoon whipped cream on top of each bun.
  15. Dust the buns with powdered sugar and serve.
