Swedish Rice Pudding
Swedish Rice Pudding is traditionally served on Christmas Eve in Sweden and a hidden almond is often added to the pudding. The person who finds the almond is said to have good luck in the coming year.

Preheat the oven to 325°F (165°C).

In a saucepan, combine the rice, milk, sugar, and vanilla extract. Bring to a boil over medium heat, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.

Transfer the rice mixture to a greased baking dish and bake in the preheated oven for 20 minutes.

Remove from the oven and let the rice pudding rest for 30 minutes.

Serve the Swedish Rice Pudding warm or chilled, topped with whipped cream and a sprinkle of ground cinnamon.
