Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, and salt.

In a large bowl, combine the melted butter and granulated sugar. Add the egg, molasses, and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the crystallized ginger.

Place the turbinado sugar in a small bowl. Roll the dough into 2-inch balls, then roll each ball in the turbinado sugar to coat.

Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.
