Sunshine S’more Cupcakes
S’mores are a popular campfire treat in the United States, consisting of a roasted marshmallow and a layer of chocolate sandwiched between two graham crackers. These Sunshine S’more Cupcakes are a delicious twist on the classic s’mores, bringing the flavors of chocolate, marshmallow, and graham crackers into a delightful cupcake form.

Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.

In a medium bowl, whisk together the graham cracker crumbs, flour, cocoa powder, baking powder, and salt.

In a separate large bowl, mix the melted butter and granulated sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly among the prepared cupcake liners. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and immediately sprinkle each with mini marshmallows. Return to the oven for 2-3 minutes or until the marshmallows are slightly melted.

Remove from the oven and let the cupcakes cool in the pan for 5 minutes. Transfer to a wire rack to cool completely.

Once the cupcakes are cooled, melt the chopped milk chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the cupcakes.

Allow the chocolate to set for about 30 minutes before serving. Enjoy!
