Portobello mushrooms are actually mature cremini mushrooms and have a meaty texture and rich flavor.

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the Portobello mushrooms and scrape out the gills using a spoon.
  3. Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic cloves. Sauté until the onion is translucent.
  4. Add spinach to the pan and cook until wilted.
  5. In a bowl, combine the cooked spinach mixture, crumbled feta cheese, breadcrumbs, chopped fresh basil, salt, and black pepper.
  6. Stuff each Portobello mushroom cap with the spinach and feta mixture.
  7. Place the stuffed mushrooms on a baking sheet and bake for 20 minutes.
  8. Remove from the oven and let them rest for 5 minutes before serving.
