  2. Cover the dough and let it rest for 30 minutes.
  3. Preheat a stroopwafel iron or pizzelle maker.
  4. Take a small portion of dough and place it onto the hot iron. Close the iron and cook for about 1-2 minutes until golden brown.
  5. Remove the cooked waffle and immediately cut it into two thin wafers.
  6. In a saucepan, melt the butter, corn syrup, brown sugar, and ground cinnamon to make the caramel filling.
  7. Spread the caramel filling on one wafer and sandwich it with another wafer.
  8. Allow the stroopwafels to cool and the caramel to set before serving.
