  4. Gradually pour in the Prosecco while whisking continuously until the mixture thickens and forms a ribbon when the whisk is lifted.
  5. Remove the bowl from the heat and let it cool for 10 minutes.
  6. In a separate bowl, whip the cream until soft peaks form.
  7. Gently fold the whipped cream into the cooled Prosecco sabayon mixture.
  8. Divide the sliced strawberries among serving glasses.
  9. Spoon the Prosecco sabayon over the strawberries.
  10. Garnish with mint leaves.
  11. Allow the sundaes to rest in the refrigerator for at least 30 minutes.
