Preheat the oven to 425°F (220°C).

In a large bowl, whisk together flour, sugar, baking powder, and salt.

Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Transfer the dough onto a floured surface and gently knead a few times until it comes together.

Roll out the dough to about 1-inch thickness and cut out circles using a biscuit cutter.

Place the circles onto a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until golden brown.

Allow the shortcakes to cool for 10 minutes, then split them in half horizontally.

In a small bowl, mix the sliced strawberries with powdered sugar.

To assemble, place a spoonful of strawberries onto the bottom half of each shortcake.

Top with whipped cream and then place the other half of the shortcake on top.
