  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, 1 tablespoon at a time, until the dough comes together. Divide the dough into 2 equal portions and shape each into a rectangle. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Roll out one portion of the dough on a lightly floured surface into a rectangle about 1/8 inch thick. Cut into 8 equal rectangles.
  5. Place a spoonful of strawberry jam in the center of 4 rectangles. Top with the remaining rectangles and press the edges to seal. Use a fork to crimp the edges.
  6. Transfer the pop-tarts to the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
  7. In a small bowl, whisk together powdered sugar and milk to make the glaze. Drizzle the glaze over the warm pop-tarts.
  8. Allow the pop-tarts to cool for 10 minutes before serving.
