  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust and press it into a 9-inch pie dish.
  3. In a mixing bowl, whisk together the egg yolks, granulated sugar, and cornstarch until well combined.
  4. In a saucepan, heat the milk over medium heat until it begins to simmer.
  5. Slowly pour the hot milk into the egg mixture while whisking continuously.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard consistency.
  7. Remove the custard from heat and stir in the vanilla extract.
  8. Pour the custard into the prepared pie crust.
  9. Slice the fresh strawberries and arrange them on top of the custard.
  10. Sprinkle the demerara sugar evenly over the strawberries.
  11. Bake in the preheated oven for 35-40 minutes, or until the custard is set and the top is golden brown.
  12. Remove from the oven and let it cool for 2 hours.
  13. Place the pie in the refrigerator for at least 2 hours to chill.
  14. Before serving, sprinkle additional demerara sugar on top and use a kitchen torch to caramelize the sugar.
