  1. Preheat the oven to 350°F (175°C) and line a mini cupcake pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  6. Gently fold in the chopped strawberries.
  7. Fill each cupcake liner about 2/3 full with the batter.
  8. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring until smooth.
  11. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  12. Fold the melted white chocolate into the whipped cream until well combined.
  13. Once the cupcakes have cooled, pipe or spread the white chocolate ganache on top of each cupcake.
  14. Serve and enjoy!
