  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, and mix until well incorporated.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set and the top is lightly browned.
  6. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan.
  7. Refrigerate the cheesecake for at least 2 hours or overnight.
  8. Before serving, top the cheesecake with fresh strawberries and whipped cream.
