  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined.
  3. Press the mixture into the bottom of cupcake liners in a muffin tin.
  4. In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  5. Add the eggs one at a time, beating well after each addition.
  6. Gradually add the flour and mix until just combined.
  7. Fold in the diced strawberries.
  8. Pour the batter into the cupcake liners, filling each about 2/3 full.
  9. Bake for 20-25 minutes or until set.
  10. Remove from the oven and let cool in the tin for 5 minutes.
  11. Transfer to a wire rack and let cool completely.
  12. Refrigerate for at least 1 hour before serving.
  13. Top with whipped cream and additional diced strawberries, if desired.
