Preheat the oven to 350°F (175°C).

In a bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Roll out one disk of dough to fit a greased baking sheet. Place on the baking sheet.

Spread the strawberries evenly over the dough.

Roll out the remaining dough and place on top of the strawberries.

Bake for 12 minutes or until golden brown.

Allow to cool completely.

Spread whipped cream on top of the cooled cookies.
