Ingredients
Instructions
-
Preheat the oven to 180°C (350°F). Grease a baking dish.
-
In a bowl, combine the dates and boiling water. Let them soak for 10 minutes. Then, add the baking soda and mix well.
-
In a separate bowl, cream together the butter and brown sugar. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
In another bowl, mix together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the date mixture. Mix until just combined.
-
Pour the batter into the prepared baking dish and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
-
Meanwhile, prepare the toffee sauce. In a saucepan, heat the double cream, butter, brown sugar, and golden syrup over medium heat. Stir until the sugar has dissolved and the sauce has thickened slightly.
-
Remove the pudding from the oven and let it cool for a few minutes. Serve warm with the toffee sauce poured over the top.
