Instructions

  1. Preheat the oven to 180°C (350°F). Grease a baking dish.
  2. In a bowl, combine the dates and boiling water. Let them soak for 10 minutes. Then, add the baking soda and mix well.
  3. In a separate bowl, cream together the butter and brown sugar. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, mix together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the date mixture. Mix until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Meanwhile, prepare the toffee sauce. In a saucepan, heat the double cream, butter, brown sugar, and golden syrup over medium heat. Stir until the sugar has dissolved and the sauce has thickened slightly.
  7. Remove the pudding from the oven and let it cool for a few minutes. Serve warm with the toffee sauce poured over the top.
