  • 1 cup Spinach
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Milk
  • 2 large Eggs
  • 2 tablespoon Butter
  • 1 cup Corn kernels
  • 1/2 cup Red bell pepper
  • 1 cup Mango
  • 2 tablespoon Red onion
  • 2 tablespoon Cilantro
  • 1 tablespoon Lime juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a baking dish.
  2. In a large bowl, mix together the cornmeal, flour, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, eggs, and melted butter.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Fold in the spinach, corn kernels, and diced red bell pepper.
  6. Pour the batter into the greased baking dish and smooth the top.
  7. Bake for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. While the bread is baking, prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, salt, and black pepper in a bowl.
  9. Remove the bread from the oven and let it rest for 10 minutes.
  10. Serve the spinach corn bread warm with mango salsa on top.
