Jumbo pasta shells are also known as conchiglioni, which means ‘shells’ in Italian.

  1. Cook the pasta shells according to the package instructions. Drain and set aside.
  2. Preheat the oven to 375°F (190°C).
  3. In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant.
  4. Add the spinach to the skillet and cook until wilted. Remove from heat and let cool.
  5. In a mixing bowl, combine the goat cheese, ricotta cheese, Parmesan cheese, egg, salt, and black pepper. Mix well.
  6. Add the cooked spinach to the cheese mixture and stir until well combined.
  7. Stuff each cooked pasta shell with the spinach and cheese mixture.
  8. Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed shells in the dish.
  9. Pour the remaining marinara sauce over the shells.
  10. Cover the dish with aluminum foil and bake for 20 minutes.
  11. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  12. Let the shells rest for 5 minutes before serving.
