  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the pumpkin puree, pumpkin pie spice, and vanilla extract, and mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and cornstarch.
  5. Remove 1 cup of the batter and set aside. Pour the remaining batter into the prepared crust.
  6. Add the black food coloring gel to the reserved batter and mix until evenly colored.
  7. Drop spoonfuls of the black batter onto the pumpkin batter in the pan. Use a knife or toothpick to create a spiderweb pattern by dragging the black batter through the pumpkin batter.
  8. Bake for 60 minutes or until the center is set.
  9. Turn off the oven and leave the cheesecake inside for 1 hour.
  10. Remove the cheesecake from the oven and allow it to cool completely.
  11. Melt the white chocolate chips and drizzle over the top of the cooled cheesecake to create a spiderweb design.
  12. Refrigerate for at least 2 hours before serving. Enjoy!
