Corn is one of the most widely grown crops in the world and has been a staple food in many cultures for centuries.

Preheat the oven to 375°F (190°C).

In a bowl, combine the corn kernels, chopped jalapeno pepper, diced red bell pepper, sliced green onions, chopped cilantro, lime juice, cumin powder, chili powder, and salt. Mix well.

Spray a muffin tin with cooking spray.

Cut the flour tortillas into circles using a round cookie cutter or a glass.

Press each tortilla circle into a muffin cup, forming a cup shape.

Fill each tortilla cup with the corn mixture.

Top each cup with shredded cheddar cheese.

Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden brown and crispy.
