Preheat the oven to 180°C (350°F).

In a large bowl, combine the rhubarb, granulated sugar, ground cinnamon, and ground ginger. Mix well and let it sit for 15 minutes.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Cut the unsalted butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to rub the butter into the flour until it resembles breadcrumbs.

In a small bowl, beat the egg and then add the milk and vanilla extract. Mix well.

Pour the egg mixture into the flour mixture and stir until just combined.

Transfer the rhubarb mixture to a baking dish and spread it evenly. Pour the batter over the rhubarb, spreading it to cover the fruit.

Sprinkle the demerara sugar over the top.

Bake for 40-45 minutes, or until the cobbler is golden brown and the rhubarb is tender.
