Heat olive oil in a pan over medium heat.

Add chopped red onion, minced garlic, and grated ginger. Saute until fragrant.

Add cauliflower florets and chickpeas. Cook for 5 minutes.

In a small bowl, mix turmeric powder, cumin powder, coriander powder, cayenne pepper, and salt. Add the spice mixture to the pan and stir well.

Cook for another 10 minutes or until the cauliflower is tender.

Add pomegranate seeds, lemon juice, and fresh cilantro. Stir well.

Remove from heat and let it rest for 10 minutes before serving.

Serve hot with rice or naan bread.
