  1. Rinse the lima beans and soak them overnight in water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic, sauté until translucent.
  4. Drain the soaked lima beans and add them to the pot.
  5. Stir in vegetable broth, diced tomato, smoked paprika, cayenne pepper, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the beans are tender.
  7. While the beans are cooking, prepare the rice according to package instructions.
  8. Once the beans are cooked, remove from heat and let them rest for 5 minutes.
  9. Serve the Southern Lima Beans over cooked rice.
  10. Garnish with fresh parsley.
