  1. Preheat the oven to 180°C (350°F).
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the apricot jam.
  5. Sift the flour, baking powder, and salt together.
  6. Mix the milk, vinegar, and vanilla essence together.
  7. Gradually add the dry ingredients and milk mixture to the butter mixture, alternating between the two, starting and ending with the dry ingredients.
  8. Pour the batter into a greased ovenproof dish.
  9. Bake for 45-60 minutes, or until golden brown and cooked through.
  10. Remove from the oven and immediately top with marshmallows.
  11. Return to the oven for 5 minutes, or until the marshmallows are soft and slightly melted.
  12. Remove from the oven and let it rest for 30 minutes.
  13. Serve warm with cream.
