Preheat the oven to 375°F (190°C).

Cut the sourdough bread into cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes until they are crispy.

In a pan, melt the butter over medium heat. Add the onions, celery, and garlic. Sauté until they are softened.

Add the mushrooms and cook until they release their moisture and start to brown.

Stir in the fresh herbs, salt, and black pepper.

In a large bowl, combine the toasted sourdough cubes and the mushroom mixture. Mix well.

Gradually pour the vegetable broth over the bread mixture, stirring gently to ensure it is evenly moistened.
