  1. In a small bowl, dissolve yeast in warm water and let it sit for 5 minutes.
  2. In a large bowl, combine sugar, salt, and flour. Add yeast mixture and melted butter. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 450°F (230°C). In a large bowl, dissolve baking soda in hot water.
  6. Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.
  7. Dip each pretzel into the baking soda mixture and place on a greased baking sheet.
  8. Sprinkle pretzels with coarse salt and bake for 12-15 minutes or until golden brown.
  9. Remove from the oven and let the pretzels cool on a wire rack before serving.
