Ingredients
  • 1.5 cup Graham cracker crumbs
  • 1 cup All-purpose flour
  • 0.25 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, melted
  • 0.75 cup Granulated sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Whole milk
  • 1 cup Mini marshmallows
  • 0.5 cup Semi-sweet chocolate chips
  • 0.5 cup Crushed graham crackers
Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, combine graham cracker crumbs, flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, whisk together melted butter and sugar until well combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.
  5. Fill each cupcake liner about 2/3 full with the batter. Top each cupcake with mini marshmallows and chocolate chips.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and sprinkle crushed graham crackers on top of each cupcake.
  8. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Serve and enjoy!
