S’mores are a traditional American campfire treat, and these Smores Brownie Cakes give you all the delicious flavors of a classic s’more in a convenient and portable dessert!

Preheat the oven to 350°F (175°C) and grease a muffin tin.

In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Press the mixture into the bottom of each muffin cup.

In a separate bowl, whisk together the remaining 1/2 cup of granulated sugar, cocoa powder, eggs, and vanilla extract. Add the flour, baking powder, and salt, and mix until well combined.

Stir in the chocolate chips. Spoon the batter evenly over the graham cracker crust in the muffin tin.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Remove from the oven and sprinkle the mini marshmallows on top of each brownie cake. Return to the oven for 3-5 minutes, or until the marshmallows are golden brown.

Allow the brownie cakes to cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
