  1. Peel and chop the beetroot, potatoes, carrots, cabbage, onion, and garlic.
  2. Heat vegetable oil in a large pot and sauté the onion and garlic until fragrant.
  3. Add the beetroot, potatoes, carrots, cabbage, tomato paste, bay leaves, and black peppercorns to the pot.
  4. Pour in enough water to cover the vegetables and bring to a boil.
  5. Reduce heat, cover, and simmer for about 45 minutes, or until the vegetables are tender.
  6. Stir in vinegar, sugar, and salt.
  7. Remove from heat and let it rest for 10 minutes.
  8. Serve hot, garnished with fresh dill and a dollop of sour cream.
