Ingredients
  • 500 gram Yam
  • 4 ounce Goats Brie
  • 1 unit Egg
  • 1 cup Breadcrumbs
  • 2 unit Spring Onion
  • 2 clove Garlic
  • 2 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. Peel and grate the yam.
  2. Place the grated yam in a clean kitchen towel and squeeze out the excess moisture.
  3. In a mixing bowl, combine the grated yam, finely chopped spring onion, minced garlic, beaten egg, breadcrumbs, salt, and pepper.
  4. Mix well until all ingredients are evenly incorporated.
  5. Heat olive oil in a frying pan over medium heat.
  6. Form small yam cakes using about 2 tablespoons of the mixture for each.
  7. Fry the yam cakes for about 3-4 minutes on each side, until golden brown and crispy.
  8. Remove from the pan and drain on paper towels.
  9. Serve the yam cakes topped with slices of goats brie.
