Shortbread and Jam Sandwiches
Shortbread is a traditional Scottish biscuit that dates back to the 12th century.

Preheat the oven to 180°C (350°F).

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Gradually add the flour and mix until the dough comes together.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

Use a round cookie cutter to cut out an even number of cookies.

Place half of the cookies onto a baking sheet lined with parchment paper.

Spoon a teaspoon of jam onto the center of each cookie on the baking sheet.

Top each jam-covered cookie with another cookie to create a sandwich.

Press the edges of the cookies together to seal.

Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
