Shakshuka

Heat olive oil in a large, deep skillet over medium heat.

Add onion and bell pepper, and cook until softened, about 5 minutes.

Add minced garlic, cumin, paprika, and harissa paste, and cook for another 2 minutes.

Stir in chopped tomatoes, tomato paste, sugar, salt, and black pepper. Simmer for 10 minutes.

Make small wells in the tomato mixture and carefully crack the eggs into them.

Cover the skillet and cook for about 7-10 minutes, or until the eggs are cooked to your liking.

Remove from heat and sprinkle crumbled feta cheese and chopped parsley on top.

Serve hot with crusty bread.
