Preheat the oven to 160°C (320°F).

In a mixing bowl, cream together the butter and caster sugar until light and fluffy.

Sift in the plain flour and rice flour. Mix until the dough comes together.

Press the dough into a lined baking tin and smooth the surface.

Prick the surface of the dough with a fork.

Bake in the preheated oven for 25 minutes, or until golden brown.

Remove from the oven and let it rest in the tin for 30 minutes.

Cut into squares or fingers while still warm.

Allow to cool completely before serving.
