Saskatoon berries are native to Canada and are often referred to as the ‘Canadian blueberry’. They have a sweet and nutty flavor and are commonly used in desserts.

  1. In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.
  2. In a small bowl, whisk together egg yolks and cold water. Gradually add to the flour mixture, pulsing until dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour.
  4. Preheat the oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the dough and fit it into a tart pan.
  6. In a bowl, combine Saskatoon berries, cornstarch, lemon juice, and vanilla extract. Mix well.
  7. Spoon the berry mixture into the tart shell.
  8. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Allow the tart to cool for at least 1 hour before serving.
  10. In a chilled bowl, whip the cream until soft peaks form. Add powdered sugar and continue to whip until stiff peaks form.
  11. Serve the Saskatoon Berry Tart with a dollop of whipped cream on top.
