Santa cookies are a popular treat during the Christmas season and are often left out for Santa Claus on Christmas Eve.

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture and mix until well combined.

Divide the dough in half and shape each half into a log.

Roll the logs in red and green sprinkles to coat.

Wrap the logs in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
