Sandtarts are a traditional European cookie, often associated with holiday baking.

  1. In a mixing bowl, cream together butter and powdered sugar.
  2. Add egg yolks and vanilla extract, mix well.
  3. Gradually add all-purpose flour and almond flour, mix until combined.
  4. Divide the dough into two equal portions, shape them into discs, and wrap in plastic wrap. Refrigerate for 30 minutes.
  5. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  6. Roll out one portion of the dough on a lightly floured surface to about 1/4 inch thickness.
  7. Cut out desired shapes using cookie cutters and transfer them to the prepared baking sheet.
  8. Repeat with the remaining dough.
  9. Brush each cookie with apricot jam and sprinkle with sliced almonds.
  10. Bake for 12-15 minutes, or until golden brown.
  11. Allow the cookies to cool on a wire rack before serving.
