The Victoria sponge cake is named after Queen Victoria, who was known to enjoy a slice of sponge cake with her afternoon tea.

  1. Preheat the oven to 180°C (350°F). Grease and line two 20cm (8-inch) round cake tins.
  2. In a large bowl, cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time, adding a tablespoon of flour with each egg to prevent curdling.
  4. Fold in the remaining flour and vanilla extract until the batter is smooth.
  5. Divide the batter equally between the prepared cake tins and smooth the tops.
  6. Bake in the preheated oven for 20-25 minutes, or until golden and springy to the touch.
  7. Remove from the oven and let the cakes cool in the tins for 5 minutes before transferring to a wire rack to cool completely.
  8. Once the cakes are completely cool, spread the raspberry jam over the top of one cake layer.
  9. In a separate bowl, whip the cream and icing sugar until soft peaks form.
  10. Spread the whipped cream over the jam layer.
  11. Place the second cake layer on top and dust with icing sugar.
  12. Decorate with fresh raspberries.
  13. Serve and enjoy!
