  1. Preheat the oven to 180°C.
  2. Crush the digestive biscuits and mix with melted butter.
  3. Press the biscuit mixture into the base of a greased springform pan.
  4. In a mixing bowl, beat cream cheese and caster sugar until smooth.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in vanilla extract.
  7. Pour the cream cheese mixture over the biscuit base.
  8. Drizzle salted caramel sauce over the top and swirl with a knife.
  9. Bake for 25 minutes or until set.
  10. Allow to cool in the oven with the door slightly ajar.
  11. Refrigerate for at least 2 hours.
  12. Serve chilled with whipped cream and extra salted caramel sauce.
