Preheat the oven to 180°C.

Crush the digestive biscuits and mix with melted butter.

Press the biscuit mixture into the base of a greased springform pan.

In a mixing bowl, beat cream cheese and caster sugar until smooth.

Add eggs one at a time, beating well after each addition.

Stir in vanilla extract.

Pour the cream cheese mixture over the biscuit base.

Drizzle salted caramel sauce over the top and swirl with a knife.

Bake for 25 minutes or until set.

Allow to cool in the oven with the door slightly ajar.

Refrigerate for at least 2 hours.

Serve chilled with whipped cream and extra salted caramel sauce.
