Salted Caramel and Toasted Pecan Truffles
Truffles are named after the edible fungi that grow underground and have a similar shape.
This is vegetarian and gluten free recipe. Dish can be prepared in 80 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.
Salted Caramel and Toasted Pecan Truffles

Toast the pecans in a dry skillet over medium heat until fragrant, about 5 minutes. Set aside to cool.

In a medium saucepan, melt the butter over medium heat. Add the sugar and cook, stirring constantly, until the sugar has melted and turned golden brown, about 5 minutes.

Slowly pour in the heavy cream while stirring continuously. Be careful as the mixture will bubble up. Continue to cook and stir until the caramel is smooth and thickened, about 2 minutes.

Remove the caramel from heat and stir in the sea salt and vanilla extract. Let the caramel cool for about 10 minutes.

In a food processor, pulse the toasted pecans until finely chopped. Add the caramel and pulse until well combined.

Line a baking sheet with parchment paper. Using a small cookie scoop or spoon, scoop out the caramel mixture and roll into small balls. Place the truffles on the prepared baking sheet.

Place the baking sheet in the refrigerator and let the truffles chill for at least 1 hour.

In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring in between, until smooth and melted.

Remove the truffles from the refrigerator. Using a fork, dip each truffle into the melted chocolate, allowing any excess chocolate to drip off. Place the truffles back on the baking sheet.

Sprinkle the truffles with cocoa powder while the chocolate is still wet.

Place the truffles back in the refrigerator and let them set for about 30 minutes.

Once set, remove the truffles from the refrigerator and serve. Enjoy!
