  3. Gradually add the caster sugar while continuing to beat until stiff peaks form.
  4. Sift in the cornstarch and add the white wine vinegar and vanilla extract. Gently fold until combined.
  5. Spoon the mixture onto a lined baking tray and shape into a circle. Create a well in the center.
  6. Bake in the preheated oven for 1 hour.
  7. Meanwhile, in a saucepan, combine the water, granulated sugar, saffron threads, and rose water. Bring to a simmer.
  8. Add the apricots to the simmering liquid and poach for 5 minutes.
  9. Remove the apricots from the liquid and set aside.
  10. Once the pavlova has finished baking, turn off the oven and leave the pavlova to cool in the oven with the door slightly ajar for 1 hour.
  11. To serve, transfer the pavlova to a serving plate. Fill the well with whipped cream.
  12. Top with poached apricots, crushed pistachios, and edible rose petals.
