In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until the dough forms a ball.

Divide the dough in half and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out one portion of the dough into a circle.

In a separate bowl, toss the fruits with lemon juice and cornstarch. Arrange the fruit mixture in the center of the rolled-out dough, leaving a border around the edges.
