Robin’s Nests

Robin’s Nests are named after the bird’s nest-like appearance created by the puff pastry and bacon.

Preheat the oven to 375°F (190°C).

Roll out the puff pastry and cut it into 6 equal squares.

Grease a muffin tin and press each square into a muffin cup, creating a nest shape.

Place a strip of bacon around the inside edge of each nest.

Crack an egg into each nest, being careful not to break the yolk.

Sprinkle shredded cheddar cheese, salt, and black pepper over each nest.

Bake for 20 minutes or until the egg whites are set and the pastry is golden brown.

Remove from the oven and let cool for a few minutes.

Garnish with chopped chives before serving.
